Kevin Blanco, Fat Toro
My name is Kevin Blanco, I am from the Canary Islands, Fuerteventura (Spain). My passion for cooking comes from a long family tradition: my grandfather was a cook on the sea vessels, my uncles are cooks and my father has been a waiter for 35 years. Cooking and hospitality are prevalent in my roots, and it was my mother who encouraged me to study and learn to become a chef.
I am currently the chef at Fat Toro restaurant in Swansea and we try to maintain the Spanish tradition of tapas and pintxos, giving it a gourmet touch without losing our traditional essence. I am currently studying International Gastronomy Management at the University of Wales Trinity Saint David; I am totally delighted as it provides me with the possibility to believe and also see other aspects of the kitchen.
